Plants grow through the process of photosynthesis, as I’m sure you already know. They need sunlight and the chemical inside their leaves called Chlorophyll, in order to convert carbon dioxide and water into glucose to help them grow. As you can see there is no mention of soil, so really plants do not need any soil to grow. They do however need water and nutrients, which can be easily obtained from soil.
